"Balanced and layered with blackberry and red cherry fruit flavors... notes of spice, coffee, cedar and mocha... firm, refined tannins..." - (Graham Weerts, Winemaker) Gentle grape pressing was followed by a saignee, a five day cold soak and a post-fermentation extended maceration to further intensify the wine's color and dramatic fruit flavors. For added complexity, a portion of the fermentation was driven by native yeast. The wine was then transferred to small French oak barrels for 14 months of aging furthering its fine-grained tannin structure and creamy spice flavors." (from Winery's website)
